PERFECT SUMMER RECIPE! Great for grill outs, parties, or just having a nice dinner on a hot day. It mixes a serving of fruit and veggies and is totally satisfying!
It was the first time we made this, so it up to tweeking and messing with. We didn’t really measure anything, we eyeballed it. Let me know if you make a different variation!
1/2 cup mint leaves (ish?)
1/2 shallot (ish?)
1 tbsp honey
1 tbsp olive oil (ish?)
Salt and pepper
White balsamic vinegar
1. Dice up watermelon and cucumber into equal sizes. Chop up mint leaves. Mix together in a larger bowl and set aside.
2. In a small bowl, mix honey, olive oil, diced shallot, juice of 2 lemons and 1 orange, and salt and pepper to taste. Grate the skin of the orange into this mixture as well!
3. Mix the ingredients from the small bowl into the large bowl and toss. Throw in a few shakes of white balsamic vinegar- to taste.
4. Serve on bed of lettuce and top with a sprinkle of feta!
